Improve docker image size #66

The current docker images are ~500MB, which is unnecessarily huge for the edge deployment case.

Lower it by doing the following:

• Implement a multi stage build
• Use a slim or alpine (check for compatibility with arm64 or v8) base image
• Remove packages that are unused
