Add App Store release checklist and align submission metadata with shipped targets

The repo already had most of the raw App Store submission material, but it was scattered across privacy, metadata, accessibility, and deploy docs. This change consolidates the remaining release work into one checklist and removes metadata claims that did not match the targets currently defined in project.yml.

• Release readiness checklist

  • Add docs/AppStoreReleaseChecklist.md as the single place to answer:
    • what is still missing before first submission
    • what increases first-pass App Review odds
  • Covers the remaining operational gaps: public privacy/support URLs, final screenshots, Xcode/macOS validation, physical-device HealthKit smoke testing, and App Store Connect metadata fill-in.

• Submission metadata alignment

  • Update docs/AppStoreMetadata.md to reflect the current shipped scope: iOS, iPadOS, and watchOS companion only.
  • Remove macOS references from the localized listing drafts in docs/AppStoreMetadata.localized.md so the copy matches the actual target graph.

• Doc cross-linking

  • Link the new checklist from README.md, docs/BuildAndDeploy.md, and docs/AppStoreMetadata.md so release guidance is discoverable from the existing submission docs.
