Problem
Currently dstack server has only the Sentry integration as the built-in observability solution. dstack users may want to use other enterprise observability platforms (Datatog, NewRelic) or OSS observability stacks (LGTM, ELK).
Solution
The proposal is to add built-in OpenTelemetry integration to dstack server. It must be able to collect and sent traces and perhaps logs and metrics to an OLTP endpoint. Users would be able to configure either Sentry or OpenTelemetry for tracing, or OpenTelemetry for tracing/logs/metrics and Sentry-compatible solution for error tracking.
