Add details on how to start rover in a standalone configuration #70

Description

@gbonk

I didn't see any details in or under the Rover section in the https://aztfmod.github.io/documentation/ on how to start the rover image as a Standalone edition.

Nor any documentation on starting a standalone rover, here... https://github.com/aztfmod/rover?tab=readme-ov-file

Granted it's probably docker start or run, but there is also some needed access to local volumes.

I do see the docker compose file at https://github.com/Azure/caf-terraform-landingzones/blob/main/rover_on_ssh_host.yml

So I can probably use that as a template.

thank you for your help
